It’s amazing how versatile potato salad is. You can have it as a side dish, quick lunch, brunch option, etc. By the end of this post, this writer wants to accomplish two things. For this recipe you will need;
-A batch of coriander (dhania)
-1 tsp. black pepper
-1 tsp. oregano leaves
-1 tsp. rosemary leaves
-Juice of 1 lemon
-1 tbsp. olive oil
-6 garlic cloves
-3 tbsp. mayonnaise
-Salt to taste
Cut your potatoes into small portions and toss them into boiling water. Once they’re ready, take them out and place them in a plate.
Drizzle some olive oil over the potatoes while they’re still hot. Season the potatoes with black pepper, salt, rosemary leaves, garlic, oregano leaves and lemon juice. Toss the ingredients together.
Chop your coriander and spread the pieces over the potatoes. Add the mayonnaise and toss the ingredients again then leave the salad to sit in the fridge.
Potato salad is really easy to put together. My prep time was about 30 minutes only. The potatoes took around 15 minutes to boil.
